Mission Statement

Dietary Management Training Program (DMT)
(Food Service Manager)

No degree neededOnly 120 classroom hours and 150 hours hands-on experience needed—not a 2 year degree commitment!

Earn more money than dietary managers who are not certified.  Have the written credentials of CMD, CFPP after your name!  Certified Dietary Manager, Certified Food Protection Professional (CDM, CFPP) are nationally recognized experts at managing operations in healthcare settings:

  • nursing homes
  • senior living communities
  • hospitals
  • rehab facilities
  • schools
  • military
  • corporations
Dietary Managers are trained and qualified to manage menus, food purchasing and food preparation.  Other responsibilities are patient care which includes documenting nutrition information, ensuring food safety, contact with patients, working with other professional team members including Registered Dieticians and Registered Dietetic Tech and managing a variety of staff members at any given facility.

Employment in the food service industry is not dependent on economic conditions.  Food service continues to grow at a very steady rate.  Becoming a CDM, CFPP will ensure a positive job opportunity for years to come!

This course is designed to prepare students for the national Dietary Managers Association (DMA) Credentialing Examination. Penta Career Center’s Dietary Managers Training course is a high-quality, "hands-on", practical course which follows the requirements set by the DMA. The four (4) core courses cover nutrition and medical nutrition therapy, food service management, human resources management, and food safety and sanitation.

Word, Excel and PowerPoint computer courses are recommended during or after completion of the DMT course to improve job placement.  Penta has an available introduction computer course through Adult Education that combines all three Microsoft programs geared just for the DMT student.  Call us for for more information.

At the 2009 Ohio Dietary Managers State Workshop on October 8th,  Dietary Manager Training
(DMT) students  from the Adult and Continuing Education Department were all involved in an "Interactive Expo Competition".    The Penta Career Center DMT students won first place in
the competition.

The entrees were judged on appearance, creativity, educational value and originality.   This
competition was open to all area food service/culinary students.  Participants who attended
the fall workshop interacted with the Penta Career Center students and the food experiment
display.  Great job winning first place!!!
